Medium has a 'no duplicate content' rule, so I don't think you can publish them again if you merely un-list them - I think this would still be classed as duplicate content. You need to delete them completely before you can re-publish them as unique content. You might also repurpose existing stories by updating and enhancing the content, adding new insights, or adapting it for a different audience.
